Roasted Acorn Squash
 
 
If you’ve never had a Roasted Acorn Squash before, you owe it to yourself to give it a try - it’s simple, delicious, and a perfect way to welcome autumn.

Ingredients
  • 1 medium acorn squash
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ¼ cup maple syrup
  • ½ tsp cinnamon
Instructions
  1. cut the acorn squash in half on the long side and scoop out the seeds
  2. score the flesh vertically and horizontally to create about ½” squares (do NOT cut through the skin)
  3. rub with butter
  4. pour in maple syrup and add in brown sugar
  5. sprinkle cinnamon
  6. Roast in 400° F oven for about 1 hour uncovered, baste every 15-20 minutes
  7. Remove and serve
