Ingredients
2 lbs chicken wings
8-12 dried shiitake mushrooms
½” ginger sliced
1 tsp salt
¼ cup rice wine
water
Instructions
Reconstitute dried shiitake mushrooms in 2 cups of water overnight
Fill pot with about 1 quart of water
Add salt, ginger slices, rice wine, and mushroom with mushroom water
Add chicken wings
Bring water to boil and skim away the scum
Turn heat down to low, cover, and simmer for 15 minutes
Ready to serve
