- 3 to 4 pounds rump roast
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed black pepper
- 1 tsp salt
- pat dry the roast
- rub with olive oil
- rub with the remaining ingredients (salt, pepper, garlic powder, and onion powder)
- allow roast to come up to room temperature (about 1 hour)
- roast in oven at 200°F for 3-4 hours until internal temperature reaches 130°F and remove
- tent roast and let it sit for at least 30 minutes before carving
