Taiwanese breakfast sandwiches is also known as mei & mei sandwiches. It's special to Taiwanese people and a wonderful breakfast to make!

Ingredients
  • 1 loaf of Taiwanese white bread (12 slices)
  • 3 eggs
  • ⅓ cup of mayonnaise
  • 1 tbsp of sugar
  • 1 persian cucumber or Japanese cucumber
  • 3 slices of ham or 3 portion of protein of your choice
Instructions
  1. Cut out the crust of the Taiwanese bread loaf
  2. Shred cucumber
  3. Make sunny side down eggs
  4. Prepare sweeten mayonnaise by Mixing ⅓ cup of mayonnaise with 1 tbsp of sugar
  5. Prepare Ham, or your choice of protein cutlet
  6. Spread mayo on one side of bread
  7. Combine the sandwich (bread + cucumber + bread + egg + bread + protein + bread)
  8. Cut diagonally
  9. Enjoy!
