Mike's Tropical Oreo Chicken Katsu Sliders with Spicy Kiwi Slaw

Ingredients
Chicken Katsu
  • 1 chicken thigh
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ cup oreo cookies crushed
  • ½ cup panko
  • 2 tbsp flour
  • 1 egg
  • coconut oil for frying
  • 1 tsp mayonnaise
Kiwi slaw
  • 1 cup shredded cabbage
  • ¼ cup shredded carrot
  • 1 kiwi
  • ½ jalapeno
  • 1 stalk green onion
  • cilantro
  • 1 tsp toasted sesame seeds
  • ¼ cup mayo
  • 1 tbsp rice vinegar
  • 3 oreo cream
  • 1 tbsp lime juice
Instructions
Kiwi Slaw
  1. julienne cabbage, carrot
  2. dice kiwi, green onion
  3. mince jalapeno peppers, cilantro
  4. mix oreo cream, mayo, lime juice, and rice vinegar
  5. toss everything together and then add toasted sesame seeds
Chicken Katsu
  1. debone / deskin chicken thigh
  2. use meat tenderizer to tenderize thigh
  3. sprinkle salt and garlic powder on the chicken
  4. mix Japanese panko and chopped oreo cookies (minus the cream)
  5. follow Japanese dredging technique - lightly flour the chicken, then dredge in egg wash, then cover with oreo panko crust
  6. deep fry in coconut oil for about 2-3 min each side and remove to drain and cool
Plating
  1. lightly toast Hawaiian sweet roll
  2. smear some mayonnaise
  3. cut chicken to fit on roll
  4. cover with kiwi slaw
  5. ready to serve!
