Omelet Fried Rice 蛋包飯

Serves: 2 ppl
- 2 cup of cooked rice
- ½ cup of diced onion
- ½ cup of diced ham
- ¼ cup of ketchup
- ½ Tbsp of sugar
- 6 eggs
- Heat up the pan at medium heat, add 1 Tbsp of oil
- Stir fry diced onion at medium heat for 2 min
- Turn to high heat, add diced ham, cooked rice, ketchup and sugar to the pan, stir fry until the color is even
- Remove from the pan and set aside
- Beat 3 eggs until they are evenly mixed
- Heat up the pan at medium heat, add 2 Tbsp of oil
- Rotate the pan until it’s evenly greased
- Pour the egg mix into the pan, stir the egg mix while it’s getting cooked
- When it is half cooked, turn to low heat, add fried rice to the center and form an oval shape
- Fold the two side to the center, gently top the omelet to a plate
- Use a paper towel to shape the omelet into perfect oval and absorb excess oil
- Decorate the plate
