Scramble egg with tomatoes probably one of the most common dishes in taiwan. Every taiwanese mom has her special tweak to her scramble egg with tomatoes. Therefore, this dish is meaningful and shares a common memory of most Taiwanese.
Sadly, my mom doesn’t make this dish that often. My memory of this dish is that whenever we go out to a restaurant,I will order scramble egg with tomatoes, and then my thrifty mom will nag me for ordering something so cheaply to make. It is not just cheap but super easy to make as well. Let’s take a look at how to do it!
Scramble egg with tomatoes Ingredients:
- 4 eggs
- 1.5 oz of green onions (about 2 green onions)
- 8.5 oz of tomatoes (about 1 round one)
- 0.5 tbs of sugar
- 0.5 tsp of salt
- 0.5 tsp of hondashi
- 0.5 oz of cilantro
First, you need to beat the egg into egg mix. Add salt and hondashi for flavor. Take a non-stick pan and use a little bit of oil. Continue to stir fry the egg mix at medium heat until it’s half cooked. The reason behind cooking the eggs first is to retain the shape of scramble egg. If you prefer your scramble egg with tomatoes to be more liquid and fluid, simply add the raw egg mix at the latter step.
After removing the half-cooked scrambled egg, add some oil and stir fry green onion at medium heat for 1 min. This step is to release the flavor into oil.
Add chopped tomatoes and continue to cook at medium heat for 3 min or until tomatoes soften. Add sugar to balance the sourness of the tomatoes.
Now you can add the scrambled egg back. Continue to stir fry at medium heat for 3 min until the egg is cooked.
Turn off the heat and add chopped cilantro. mix well. It’s done!
As I mentioned earlier, every mom has it’s own adaptation to her dish. My mom likes to add chopped cilantro and I love the combination of the flavors. Chinese dishes tend to be flexible and open to improvisation. Here are few things you can try out
- add some ketchup to egg batter
- use sesame oil to season
- add sriracha hot sauce to season

- Add half-cooked egg scramble, cook at medium heat for 3 mins until egg scramble is cooked
- Turn off the heat, add chopped cilantro
