There are many things which are considered “happy meal” for Taiwanese children in addition to the well-known McDonald’s version. Those dishes include corn chowder, pizza, corn dog, tonkatsu curry rice, and last but not least, omelet fried rice. Omelet fried rice is ketchup based fried rice wrapped in a thin egg cover. It’s very pretty and tastes good. I especially love those chefs who will write my name on the omelet with ketchup. Right now, I’m too old to ask for my name written on an omelet fried rice. Therefore, I will only make omelet fried rice at home so I can write whatever I like on top of it! Here is the awesome recipe for you!
Omelet Fried Rice Ingredients:
- 2 cup of cooked rice
- ½ cup of diced onion
- ½ cup of diced ham
- ¼ cup of ketchup
- ½ Tbsp of sugar
- 6 eggs
First thing first, we need to make the fried rice. In this recipe, I’m doing a simple fried rice to go into the omelet. However, if you are an experienced chef or a cooking veteran, feel free to work your imagination. The only requirement is that it has to be a ketchup-based fried rice.
Now, heat up the pan and add a tablespoon of oil, add diced onion to the pan
Cook at high heat for 2 minutes or until it’s translucent. Turn to high heat and add cooked rice, diced ham, ketchup, and sugar to the pan, stir fry until the color is even.
Remove the fried rice from the pan and set aside for later.
Grease the pan with 2 Tbsp of oil, heat at medium heat. Pro tip: It has to be non-stick pan, preferably a really good non-stick pan. The omelet is very delicate, and it will break easily if it sticks to the pan. In addition to the coating, the corner of the pan should be round so it’s easier for you to top your omelet fried rice unto a plate. New pan is always good. I failed three to four times before I bought a new pan. Ever since I bought a new pan, I got 80% to 90% successful rate.
Beat 3 eggs evenly and pour into the pan.
Here is the key to a successful egg cover. Turn to medium heat, stir and shake the egg mix constantly while it’s being cooked. The reason behind it is to create evenly cooked mixture before the shape is formed. If you do not shake and stir, the eggs touching the pan will turn brown while the top side is still uncooked! Once the egg is solid enough, turn to low heat and add rice.
Carefully add the fried rice to the center, make sure it’s oval shape. It is even better if you have the long side facing away from handle as shown in picture. It’s easier to plate this way.
Let’s go with most basic way to plate. Believe me, many omelet fried rice have died in my hand at this stage. Therefore, I’ll quickly go over all three ways of flipping the omelet fried rice.
First, the master way of doing it, is to flip it in the pan. You gently flip it little by little, and slide it onto a plate. With 10 years of flipping over easy fried eggs, I still failed to do so.
Second, the experienced way of doing it, is to flip it while transferring to a plate. While you transferring it, you can roll over so the egg can cover the rice perfectly. After it is transferred, use a paper towel to shape it into a perfect oval.
Third, the failed-proof-but-not-so-cool way of doing it, is to fold two side and top directly onto a plate. Fold two sides as shown in the picture, gently push the omelet to the side. Hold on to your empty plate and keep it facing the pan. Quickly flip over to transfer the omelet fried rice onto the plate. Use paper towel to shape it into a perfect oval.
Now you have passed the test, you made an omelet fried rice. it’s the time to relax now. Use your creativity to decorate the plate, steam veggies, and draw something with the ketchup.
I squeeze some ketchup to a small ziploc bag and cut a little bit of the corner. It works for me!

- Turn to high heat, add diced ham, cooked rice, ketchup and sugar to the pan, stir fry until the color is even
- Remove from the pan and set aside
- Beat 3 eggs until they are evenly mixed
- Heat up the pan at medium heat, add 2 Tbsp of oil
- Rotate the pan until it’s evenly greased
- Pour the egg mix into the pan, stir the egg mix while it’s getting cooked
- When it is half cooked, turn to low heat, add fried rice to the center and form an oval shape
- Fold the two side to the center, gently top the omelet to a plate
- Use a paper towel to shape the omelet into perfect oval and absorb excess oil
- Decorate the plate
