Breakfast is always the best part of a day. When I was in Taiwan, I love standing by the little breakfast stand, not knowing which sandwich to choose. They have ham flavor, burger meat flavor, pork sung flavor, chicken katsu flavor, teriyaki beef flavor. Any interesting combo you can think of, you can find it! They will cut them into a right triangle shape to show you what’s inside. After I left for US, this is something I miss the most. Therefore, every time I go back to Taiwan, I will go to all my favorite breakfast places, every single day. We have several different kind of breakfast, and my favorite will always go to….all of them! Seriously, I love all kinds of Taiwanese breakfast and I tend to overeat a lot. Today I will introduce the first one to you – Taiwanese breakfast sandwich! I know we have sandwiches in America so what is special about Taiwanese sandwich? It’s everything about it 🙂 Taiwanese sandwiches put eggs in them, which for some reason I have never seen at any other sandwich place yet. Anyway, I want to show you this important dish to all Taiwanese. It’s the flavor I grew up with!

Ingredients

  • 1 loaf of Taiwanese white bread (12 slices)
  • 3 eggs
  • ⅓ cup of mayonnaise
  • 1 tbsp of sugar
  • 1 persian cucumber or Japanese cucumber
  • 3 slices of ham or 3 portion of protein of your choice

First, cut out the crust off of the white bread. The white bread you buy from Taiwanese bakery taste very different from ones you got from regular bakery. The texture is smoother and less fluffy. If you really cannot find Taiwanese white bread, regular white bread is still doable. We usually don’t eat the crust part so you want to cut it out 🙂 The trick I always want to learn from these Taiwanese breakfast shops is how to cut off all the crust of the entire loaf with only 4 cuts. However, if you are not skilled enough to cut out edges for entire loaf, it’s important to cut at least 4 bread together. The reason is that we want to have perfect matching shape when you stack them up together. If you are cutting them individually, you may end up with squares that don’t match. I have OCD when I am cooking, and this will kill me from the inside if I have non-matching breads!

Now we need to prepare all the ingredients. Shred the cucumber and cook the eggs sunny side down. Usually our breakfast shops will wake up at 4AM to cook all of them, this is one of my favorite scene when I woke up too early because of jet lag, watching diligent Taiwanese preparing to energize the city. Other than shredded cucumber and sunny side down eggs, prepare your favorite protein. My favorite choices are: ham, pork sung, chicken katsu or burger meat. However, like always 🙂 get creative! My friends!

Mix the mayonnaise with some sugar because Taiwanese mayonnaise is usually sweeter. Make sure you mix well enough until the sugar dissolve in mayonnaise. Now put everything on the table, you are ready to start making awesome Taiwanese sandwiches!

Apply a small amount of mayonnaise on one side of each bread. Now you can combine it! It goes like this, put a bread on top of the shredded cucumber which is on top of another slice of bread that is on top of the sunny side down egg which is placed on top of the third slice of bread which is on top of the protein of your choice and finally put on top of the fourth slice of bread. Basically it’s bread between every ingredient. Now, you know why I insist that you cut all four bread together. Look how they line up beautifully. It satisfies my OCD soul.

Here is the best part: Take a sharp bread knife, cut the sandwich diagonally. See this? the sandwich is so colorful, you see the green, see the yellow and see the red. I feel energized already merely by looking at it! This is my favorite breakfast. I hope you like it too! Taiwanese breakfast sandwiches is also known as mei & mei sandwiches. It's special to Taiwanese people and a wonderful breakfast to make!
Ingredients
  • 1 loaf of Taiwanese white bread (12 slices)
  • 3 eggs
  • ⅓ cup of mayonnaise
  • 1 tbsp of sugar
  • 1 persian cucumber or Japanese cucumber
  • 3 slices of ham or 3 portion of protein of your choice
Instructions
  1. Cut out the crust of the Taiwanese bread loaf
  2. Shred cucumber
  3. Make sunny side down eggs
  4. Prepare sweeten mayonnaise by Mixing ⅓ cup of mayonnaise with 1 tbsp of sugar
  5. Prepare Ham, or your choice of protein cutlet
  6. Spread mayo on one side of bread
  7. Combine the sandwich (bread + cucumber + bread + egg + bread + protein + bread)
  8. Cut diagonally
  9. Enjoy!
